Quick and Natural Energy Bites for Everyone

One of the easiest to make and, although sweet, has some amazing nutritional value.  Easily gives you the sweet tooth fix and happy to know it’s all natural ingredients.  Nothing to cook and easy one to make with the kids or as a group – plan for an assembly line to make it go quick.

Time:

15-20 min

Serves:

10-12 (easily)

Good for:

  • Great to involve the kids
  • Easy to make and no cooking required
  • All natural ingredients

Ingredients:

  • 24 Medjool dates or equivalent if using other types
  • 1 cup quick oats
  • 1 cup walnuts
  • 1 cup nut butter (almond, pistachio or peanut)

To cover – use any one or more of the following or use your own ideas:

  • Ground Pistachios (to cover)
  • Desiccate coconuts (to cover)
  • Sesame seeds (to cover)
  • Cocoa powder (to cover)
  • Cinnamon/brown sugar mix (to cover)

Kitchen things you’ll need:

  • Food processor
  • Many little bowls

Making it:

  • Take out the pits from the dates (or buy pit-less ones)
  • Put the dates, oats, walnuts, and nut butter in a food processor and mix.  If it’s a little dry just add hot water a little at a time.
  • Take out the mix and oil your hands a little (with olive oil)
  • Take out one tablespoon at a time and roll it into a ball, once you finish the mixture roll each ball in the cover of your choice.

Tips/notes:

  • You can make it more festive using coloured sprinkles to cover
  • For a more subtle sweetness cover with ground almonds
  • For something a bit more exotic you can cover with poppy seeds or a little chilli powder
