Ingredients:
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 2 medium ripe tomatoes, diced
- 200–250 g ground lamb (or beef)
- Spices: salt & pepper to taste (optional but highly recommended: turmeric, cumin, coriander, or all-spice for extra flavor)
- 3–4 eggs
- Fresh parsley, chopped (for garnish)
- Warm flatbread or pita, for serving

Making it:
