Ingredients:
- 800g Sweet potatoes, peeled and cubed
- 1 Large yellow onion, diced
- 2 Large carrots, peeled and sliced
- 30ml Olive oil or coconut oil
- 15g Fresh ginger, grated (about a thumb-sized piece)
- 2 Cloves garlic, minced
- 1L Vegetable stock (hot)
- 200ml Coconut milk (canned, full-fat for creaminess)
- 5g Sea salt (adjust to taste)
- 2g Ground turmeric (for extra color and health benefits)
- Fresh cilantro or toasted pumpkin seeds for garnish

Making it:
- Heat the oil in your pot over medium heat. Add the onion and carrots, cooking for about 5–7 minutes until the onion is translucent. Stir in the garlic, ginger, and turmeric, cooking for just 1 minute until fragrant.
- Add the cubed sweet potatoes to the pot and pour in the vegetable stock. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20–25 minutes, or until the sweet potatoes are soft enough to be easily mashed with a spoon.
- Remove the pot from the heat. Use an immersion blender to blend the soup until completely smooth. (If using a countertop blender, work in batches and be careful with the hot liquid!)
- Return the pot to low heat and stir in the coconut milk. Season with salt and a crack of black pepper. Let it simmer for another 2–3 minutes to harmonize the flavors.
- Ladle into bowls and top with a swirl of coconut milk, fresh cilantro, or a handful of toasted pumpkin seeds for crunch.
